Mixture before putting in tortillas
1 lb. ground Turkey sausage
1 red bell pepper
1 tsp chili powder
1/2 tsp ground cumin
1 can stewed tomatoes
1 can black beans, drained and rinsed
1/2 - 1 cup Mozzarella cheese, depending on how cheesey you want to make them
10 tortillas, I like the flavor of whole wheat with this recipe best
1. Preheat oven to 350 degrees. Spray casserole dish with cooking spray.
2. Saute sausage. Add bell pepper, scallions, chilli powder, cumin. Cook 5 minutes. Add tomatoes and beans. Reduce heat and simmer 5 minutes longer.
3. Divide mixture between tortillas. Sprinkle with cheese and bake until heated through, about 30-35 minutes. Let stand 10 minutes before serving.
