Ingredients:
- 5 slices thick cut bacon (fat trimmed, diced)
- 1/2 Large onion (diced)
- 1/2 Bell pepper (diced)
- 2-3 15oz Cans Black-eyed peas (drained and rinsed)
- 3-4 Cups chicken broth
- 1 Teaspoon Chili seasoning (optional, add more if you want a little heat)
- 1/4 Teaspoon thyme
- 1/2 Red onion (chopped)
- 1 Teaspoon vinager
Preparation:
Heat a large pot over medium-high heat. Add in bacon, fry till fat is rendered, about 4 min. Add in white onion and pepper. Saute tender. Add in peas, chicken broth, chili seasoning, and thyme. Bring to a boil, reduce heat to medium-low and simmer, partially covered and stirring occasionally, adding more liquid if needed (simmer about 1 hour). Now make yourself some cornbread... because its good.
Mix your red onion and vinegar together and let them sit till soup is done. Place over top of individual soup.
This is supposed to be a Southern New Years dish.. You drop a dime in it and who ever gets the dime is supposed to have good luck for the next year! woo hoo! (Don't choke)
