In a separate bowl, sift together flour, cocoa powder, baking powder and salt. Slowly incorporate the dry mix into wet ingredients, until just combined.

Baked French Toast

I got this from PW. Its sooo good.

Prep Time: 15 min
Cook time: 1 hour
Difficulty: Easy
Servings: 12

Ingredients:
  • 1 Loaf crusty bread, Sourdough or french is good (torn in large pieces)
  • 8 whole eggs
  • 2 Cups whole milk
  • 1/2 Cup whipping cream
  • 3/4 Cup Sugar
  • 2 Tablespoons vanilla extract
Topping
  • 1/2 Cup packed brown sugar
  • 1 Teaspoon cinnamon
  • 1/4 Teaspoon salt
  • 1/2 Cup cold butter cut into pieces
  • Fresh fruit

Preparation:

Place torn bread in a 9x13 baking dish.

In a bowl mix eggs, milk, cream, sugar and vanilla. Pour evenly over bread chunks. Cover tightly and store in fridge, Overnight is great! If you can't wait and want it now, then just set it aside while you make your topping.

In a separate bowl mix flour, brown sugar, cinnamon and salt. Add in butter mix till its crumbly! Then store in a Ziploc overnight! Or crumble over top and get ready to throw in the oven.

Preheat oven to 350°F. Sprinkle on crummy mixture. If you are using fruit you can add it before the crumbs, or have it fresh on the side (I made a quick fruit salad and roasted pecans that I added when it was done! yummm!) Okay, Bake for 45-60 min. At 45 min you get a soft pudding texture. the longer you wait the more firm it will be.

Chicken Stuffed Mushrooms

Prep Time:30 Min
Cook time:30 Min
Difficulty: Easy
Servings:

Ingredients:
  • 24 oz White button mushrooms
  • 1 Chicken breast
  • 2 Strips bacon
  • 1/2 Cups onion (finely chopped)
  • 2 Cloves garlic (finely chopped)
  • 2 Teaspoons fresh parsley
  • 1/3 Cups white wine (or Chicken Broth)
  • 1/2 Cups cream Cheese
  • 1 Egg yolk
  • 3/4 Cups Parmesan cheese (I use shaved, or large grated)
  • Salt and pepper to taste

Preparation:

Preheat oven to 350°F.
Wash mushrooms and pop out stems. Place caps in a casserole dish, chop stems and set aside. Cook your bacon, once its done set aside on paper towel. Drain most of the grease leaving about a teaspoon, (save the rest in case you need more) Now cook your chicken breast in left over oil. ( I like to pound the crap out of my chicken first, it helps it cook more evenly and i get out my aggression!) Remove cooked chicken from pan. now turn the heat up and add your white wine to de-glaze your pan, scraping the bottom. allow to evaporate.
Turn heat down and add mushroom stems, onion and garlic. cook soft, should only be a few min.
Chop your chicken and bacon finely(I like to trim off the fat too, because I think its kinda gross), stir in your onion mix.
In a separate bowl soften your cream cheese and mix it with your egg yolk and Parmesan. Add to your meat and vegetable, fill the caps with this goodness!
Now bake for 20-25 min at 350°F
(Miah likes melted cheese over the top)

Sugar Cookies

Given to me by Candice Sorensen... THANK YOU!
Prep Time: 30min.
Cook time: 5-7min.
Difficulty: Easy.
Servings: 2 dozen.

Ingredients:
  • 1 Cup Shortening
  • 2 Whole Eggs
  • 2 Teaspoons Vanilla
  • 2 Cups Sugar
  • 1 Cup Sour Cream
  • 5-1/2 Cups Flour
  • 1 Teaspoon Salt
  • 2 Teaspoons Baking Soda

Preparation:

Preheat oven to 425°F. Cream together shortening, eggs, vanilla, and sugar. Add sour cream. Then in a separate bowl sift 4 cups flour, salt and baking soda. While stirring add to creamed mix. Add more flour to get a thicker consistency, but you don’t want it to be over floury, it should be a little sticky still. Ok, now spread some flour out on a flat surface. Take a handful of dough. I usually do enough to just make one pan about 6 per pan. Roll out your dough and cut whatever shape you like. I roll mine out kinda thick. They turn out soft and fluffy and mmmmmmmmm…

Bake 425°F for 5-7 min. They should look even in color, but not browning yet. Next make some yummy frosting and decorate with the kiddies!! Enjoy
